The process route comes before automation
A French fries project may produce fresh chilled fries, pre-fried frozen fries or another market-specific product. That decision changes the process after frying and determines whether cooling, IQF freezing, frozen storage and automatic packing are required.
A typical industrial route can include washing, peeling, cutting, grading, blanching, water removal, pre-frying, de-oiling, cooling and packing. Frozen-fries projects add controlled freezing and cold-chain requirements.
Semi-automatic and fully automatic comparison
| Planning point | Semi-automatic line | Fully automatic line |
|---|---|---|
| Material transfer | More manual loading or transfer between selected stages | Coordinated conveyors and controls maintain steadier flow |
| Production scale | Published reference: 50-200 kg/h | Published reference: 100-5000 kg/h |
| Labor plan | More operator involvement in handling and process checks | Greater automation, while operators still supervise, clean and inspect |
| Factory requirements | Can use a simpler layout depending on scope | Requires coordinated space, utilities, controls and downstream integration |
| Frozen product | Possible with separately defined freezing and packing scope | Can integrate IQF freezing and automatic packing as a complete project |
These capacity figures are published planning references, not guaranteed output for every potato variety or product specification. Final output must be confirmed against the selected process and equipment.

Where automation adds value
Automation helps stabilize feed rate, blanching time, fryer loading, oil temperature and transfer between modules. It can also coordinate alarms and recipes. It does not remove the need for raw-material inspection, sanitation, preventive maintenance or product-quality checks.
Plan the fryer with the preparation section
Cut size, blanching condition and surface-water removal affect the fryer. If preparation sends an uneven or excessively wet feed, fryer temperature and product color become harder to control. The French fries frying line should therefore be sized as a complete process rather than a standalone fryer.
Use the Dubai project as a configuration reference
The Dubai frozen French fries project records a fully automatic line with a 500 kg/h designed output, covering raw potato preparation through frying, IQF freezing and automatic packaging. The source also records completed installation, commissioning and trial running. It is a real project reference, not a universal standard layout.
